LOUISIANA RED BEANS AND RICE

Ingredients

.5 lb dry red beans

4 cups water

.25 lb salt pork diced

1 cup onions chopped

1 cup celery chopped

2 tablespoons parsley snipped

.25 teaspoon crushed dried red pepper

1 clove garlic minced

1 bay leaf

2 cups rice hot, cooked

Directions

Rinse beans. Place beans in large Dutch oven. Add the water. Bring to boiling; reduce heat and simmer 2 minutes. Remove from heat. Cover; let stand 1 hour (or combine beans and water; soak overnight). Do not drain. Add salt pork, onion, celery, parsley, red pepper, garlic, and bay leaf. Bring to boiling; cover and simmer 1 hour and 45 minutes, stirring once or twice. Remove bay leaf. Mash beans slightly. Serve over hot cooked rice.
